Mel’s Back to School Apple Cake

This is my son’s favourite lunchbox treat. Being an American recipe, this is measured in cups, making it super easy to put together - little hands can do the measuring, while you prepare the apples!

  •   3 cups plain flour
  •    2 cups caster sugar
  •    1 tsp. salt
  •    2 tbsp. cinnamon
  •    1 tsp. bicarbonate of soda
  •    1 cup raisins
  •    4 apples, peeled, cored and diced
  •    1 tsp vanilla essence
  •    ¾ cup oil (veg or sunflower)
  •    3 eggs
  1. Measure flour, sugar, salt, cinnamon, bicarbonate of soda, and raisins into a large bowl and stir. Once combined add the apples and stir through.
  2. Mix wet ingredients in a jug, then pour into dry ingredients and stir until completely blended (the mixture will be very thick).
  3. Spread mixture into a lined 10” square tin and bake at 160c for 40 min. or until cooked right through. This cake will taste even better the day after it’s made (if you can wait that long)!
